One grilled scallop cooked in pine, with a creamy prawn sauce emulsion.
Jerusalem artichoke and shellots tuiles, artichoke confit.
MAIN
Meat: Duck breast with a taste of rosemary and red wine sauce.
Potato confit, cream foam from rosemary, potato tuile served with glazed carrots and green beans.
OR
Vegetarian: Fresh goat’s cheese, raviole and black garlic, mushroom cream, parsley sauce. Butternut confit, butternut tile and hazelnuts.
DESSERT
